While we were cooking . . . .

Serendipitous Cocktail: Tamarind Soda, vodka, lime wedge over ice.

Serendipitous because Meg found the soda on her way here, and tamarind seemed like a good compliment to preparing the Tandoori Chicken. Also, spur of the moment we made kale chips, which we saw on Anne Burrell's show. Both were a very pleasant surprise!

Kale Chips

Ingredients:
  • Organic kale
  • Olive oil
  • Salt and pepper to taste.

Preparation:
  • Wash and shake dry the kale
  • Place in a large bowl, sprinkle with olive oil and toss
  • Spread in single layer on sheet pan
  • Sprinkle with salt and pepper
Bake in 250 degree oven for 30 minutes.

What we learned:

Even though our kale was small, the ribs remained chewy . . .  not bad, just a little chewy. Next time, especially if the leaves are bigger we will probably cut the rib out. Because kale leaves vary greatly in size sample after 30 minutes to test crispness.

And that we really like tamarind soda!!
